OMAKASE is a reservation management service exclusive to the top fine dining restaurants in Japan, giving the chef the decision to prepare the best with what they got in that day. It was a extravagant dish not listed in the menu to treat the frequent customers with ingredients that is difficult to share with other customers. 

Recently,  there are many cafes, top professionals showcasing exceptional coffees in the name of Coffee Omakase event worldwide. So why not in Goodenough ?

We will taste the Exquisite Coffees by Martin Wölfl, Wildkaffe, the current World Brewers Cup Champion. 

He is also legendary champion of the Austrian Brewer Cup Champion 2021, 2022, 2023, and new 2024/ 2025 season by his cafe member Eline Ferket.

It is great chance for people who prefer filter coffee to taste the World Brewers Cup champion's coffee, if not a dream in one's life !

Preparation & Serving

 

 Each brew will be shared equally, comparing the flavours in each coffee as well as in different brew method that won top 3 in recent championships.

You will have at least 5 kinds of world class filter coffee according to your selection from diverse arrange of brewing method composed with most bold experimental coffee with understanding of the exiquisite level of coffee and processings.

1. Brewers Series - L01 - Panama - Lamastus Loma

The cherries for this Geisha are grown at an altitude of 1,700 to 1,775 meters above sea level. Classic Natural was dried on beds for 15 days. The resting period began on February 13, 2024.

Elida Estate is located in Alto Quiel in Boquete, Panama at an altitude of 1,670 to 1,950 meters. The coffee plants thrive in the shade of the surrounding forest. The farm is home to many exotic native plant, bird and mammal species including the quetzal (bird) and jaguar, a biologically rich and diverse cloud forest. The volcanic soil of the Baru Volcano provides all the nutrients the coffee plants need. There is a lot of fog and mist during the dry season and cold nights, so the coffee trees start producing after 4.5 to 5.5 years. These low temperatures also extend the ripening time by a month. All of these unique growing conditions are reflected in an excellent

 

2. Brewers Series - LOOR01 - LOST ORIGIN - Chevas Estate Geisha

The cherries for this coffee were grown on lot number 48 of the Chevas Coffee Estate, located near the Barú volcano in Boquete, Panama.

Lot 48 was harvested on December 22, 2023 at 1,500 meters above sea level. This batch was processed with one of LOST ORIGIN's personal favorite yeast strains, the thiolated lager strain Lunar Crush. The cherries were pitted and placed in a custom-built fermenter set at 12 degrees Celsius, where the parchment was to remain for 10 days. This is the longest fermentation time, but by using low temperatures, LOST ORIGIN is able to create a complex yet clean profile. After fermentation, the parchment was dried in drying rooms for 20 days.

 

3. Ethiopia Karmachi - by wine processing technique "Carbonic Maceration"

The Tracon Gesha farm was founded in 2019. Just a few years later, it had a production area of 200 hectares. The cherries thrive at an altitude of 1,400-1,684 m above sea level. The growing area is also very warm compared to the usual coffee growing areas in Ethiopia. The Gori-Gesha variety is located in the huge and dense forest of the Omo Valley and is one of the oldest coffee varieties that has ever existed. It comes from the forest, about 20 minutes from the farm.
